There is no way of determining whether an oyster is male or female by examining its shell. While physiologically oysters have separate sexes, they may change sex one or more times during their lifespan, depending on which is best for mating at the moment. Oysters mate by broadcasting their gametes in the water, and fertilization takes place outside of their bodies.
